Oven Baked Cheese Sticks with Herb Pesto

Ingredients

    1 Cup
    Extra Virgin Olive Oil
  2. 2
    1 Ounces
    Chives
  3. 3
    Kosher Salt
  4. 4
    2 cloves
    Garlic Cloves
  5. 5
    Pan spray
  6. 6
    1 Each
    Lemon, Zest and juice
  7. 7
    3 Each
    Eggs, whipped smooth
  8. 8
    Black Pepper
  9. 9
    25 Each
    Ritz crackers, Crushed
  10. 10
    2 Tbsp
    Parmesan Cheese, Grated
  11. 11
    1/4 Cup
    Walnut pieces
  12. 12
    2 Tbsp
    Cornstarch
  13. 13
    1 Bunch
    Flat Leaf Parsley
  14. 14
    8 Each
    String Cheese
  15. 15
    2 Ounces
    Basil leaves

Steps

  1. Preheat oven for 400 °F.
  2. Prep all of the first 4 items for a breading set up.
  3. Dust the cheese with the cornstarch.
  4. Toss in egg and then in the crushed crackers.
  5. Repeat previous step.
  6. Pan spray a baking sheet, place the breaded cheese on the sheet, and pan spray the cheese sticks.
  7. Bake for 8-10 minutes until golden brown.
  8. Remove from the oven.
  9. Puree all of the ingredients for the pesto in a food processor until smooth.
  10. Serve the golden-brown cheese sticks with the pesto for dipping.
