String Cheese Antipasta Skewers

Ingredients

    Garlic cloves, Finely minced

    Fresh oregano, Finely chopped

    Grape tomatoes, Cleaned, ends removed

    Bamboo skewers, At least 8" long

    Extra virgin olive oil

    3 Can
    Artichoke hearts, Without oil, halved

    24 Sticks
    String Cheese Sticks, Cut each stick into 4 piece

    60 Each
    Kalamata olives, Pitted

    3 tsp
    Basil, Finely chopped
  10. 10
    1/2 tsp
    Fresh black pepper
  11. 11
    3 Tbsp
    Balsamic vinegar

    6 Ounces
    Prosciutto, Sliced, cut into strips and folded

    Kosher salt

    Fresh thyme, Finely chopped

Steps

  1. In a blender, mix together balsamic vinegar, olive oil, vegetable oil, basil, thyme, oregano, garlic, salt, and pepper.
  2. Skewer the cheese, tomatoes, olives, artichokes, pepperoni, and prosciutto on the bamboo skewers.
  3. Brush or drizzle the herb dressing on each skewer and serve on a platter.
